Vegetarian Chocolate Chip Cookies
- 2/3 c. shortening (part butter or margarine)
- 1/2 c. granulated sugar
- 1/2 c. brown sugar, packed
- 1 c. plain yogurt
- 1 tsp. vanilla
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 (6 oz.) pkg. semi-sweet chocolate chips (1 c.)
- Heat oven to 375u0b0.
- Mix shortening, sugars, yogurt and vanilla thoroughly.
- Measure flour by dipping method or by sifting.
- (For a softer, more rounded cookie, add 1/4 cup more flour.)
- Stir dry ingredients together; blend in.
- Mix in chocolate chips.
- Drop rounded teaspoonfuls of dough about 2 inches apart on ungreased baking sheet.
- Bake 8 to 10 minutes or until delicately browned. (Cookies should still be soft.)
- Cool slightly before removing from baking sheet.
- Makes about 4 to 5 dozen cookies.
