Garlic Couscous Cauliflower
- 1 head cauliflower
- 4 cloves garlic minced
- 1/4 onion medium, chopped
- 1 tablespoon scallions chopped
- 1 tablespoon olive oil
- 1/2 teaspoon red pepper flakes
- salt to taste
- Remove the stems and cut out the core from the cauliflower.
- Chop the cauliflower florets into smaller pieces, for easier pulsing.
- In a food processor, throw in the florets and pulse until the cauliflower has been processed down to couscous-looking grains. (Depending on your food processor, this may have to be done in a few batches. I did mine with finely cut cauliflower- in 2 batches, pulsing every few seconds.)
- Once all the cauliflower has gone through the food processor, heat a pan with olive oil.
- Add the cauliflower, onions, and garlic, and cook for 15 minutes on medium heat.
- Remove and top with fresh scallions, and season with salt and red pepper flakes.
- Enjoy with your favorite protein for a more complete dish!
