Garlic Couscous Cauliflower

  1. Remove the stems and cut out the core from the cauliflower.
  2. Chop the cauliflower florets into smaller pieces, for easier pulsing.
  3. In a food processor, throw in the florets and pulse until the cauliflower has been processed down to couscous-looking grains. (Depending on your food processor, this may have to be done in a few batches. I did mine with finely cut cauliflower- in 2 batches, pulsing every few seconds.)
  4. Once all the cauliflower has gone through the food processor, heat a pan with olive oil.
  5. Add the cauliflower, onions, and garlic, and cook for 15 minutes on medium heat.
  6. Remove and top with fresh scallions, and season with salt and red pepper flakes.
  7. Enjoy with your favorite protein for a more complete dish!
