Warm Bean And Zuchinni Salad
- 2 cans great northern beans or any white bean, rinsed and drained
- 2 zucchini diced in 1 inch cubes
- 1 onion medium, diced
- 4 cloves garlic minced
- 1 bag frozen green beans
- 1 handful parsley minced
- 2 teaspoons dijon mustard
- 1 tablespoon olive oil
- Place the green beans in a microwave safe bowl and cover with water. Microwave for 4 minutes. Drain water and set aside.
- Heat 1 tablespoon of olive oil in a medium skillet on medium heat. Saute the zucchini until brown and tender, 4-5 minutes. Remove and season with salt and pepper
- Add the onions and cook for 2 mins. Add the garlic. Cook for 1 minute. Add the green beans. Cook for a few minutes and make sure beans are cooked.
- Add the white beans, parsley, and 2 teaspoons of Dijon mustard. Stir well to ensure the Dijon mustard is incorporated into the salad. Remove from heat. Season to taste.
