Fruit Salad With Cool Ginger Cream

  1. Warm the apricot jam in a pan with the lemon juice and honey. Leave to cool. Add all the fruit except for the starfruit and let stand for 15 mins.
  2. Whisk the ice cream with the ginger and spoon into 6 shallow dessert bowls. Top with the fruit salad and decorate with starfruit and mint leaves.
