Paella
- 1/2 lb. Italian sausage
- 1 lb. shrimp, shelled
- 12 mussels, scrubbed
- 12 small clams in shell
- 2 lb. chicken (I use wings)
- 4 Tbsp. olive oil
- 1 green pepper, chopped
- 3 medium onions, chopped
- 1 red pepper, chopped
- 2 gloves garlic, minced
- 2 large tomatoes, chopped
- 1 c. peas
- 1 1/2 c. white rice
- 2 tsp. salt
- 1 tsp. saffron (optional)
- 3 1/2 c. clear chicken broth
- 5 Tbsp. white wine
- 1 bay leaf
- If you don't have a paella pan, the broiler pan with your oven is large enough to use.
- In Dutch oven, heat oil.
- Add peppers and onions.
- Cook until tender.
- Add garlic, tomatoes and peas.
- Stir in rice, salt and saffron.
- Coat rice well and remove from heat. Transfer to prepared pan (sprayed with Pam).
