Creole Coleslaw
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 2 tablespoons mayonnaise
- 1 tablespoon prepared horseradish
- 1 teaspoon dijon mustard
- 2 teaspoons cajun seasoning mix or Creole
- 2 cups red cabbage shredded
- 2 cups green cabbage shredded
- 1/2 cup yellow bell pepper sliced
- 1/4 cup radish sliced
- 1/4 cup grated carrot
- 2 tablespoons red onion chopped
- 1/4 cup fresh parsley leaves chopped
- lime slices to garnish
- In a large bowl, whisk together vinegar, sugar, mayonnaise, horseradish, mustard and seasoning mix. Season. Add cabbage, pepper, radish, carrot, onion, and parsley and toss to coat. Cover and chill for 1 hour. Toss before serving and garnish with lime slices.
