Nuevo Noche Sofrito Bread Pudding

  1. Sweat peppers, onion and garlic in olive oil.
  2. Add achiote paste; deglaze with orange juice.
  3. Add cilantro and season with salt and pepper, reserve and cool.
  4. Soak bread in hotel pan with whipped eggs and heavy cream.
  5. Fold ham, cheese, reserved cooled pepper mix, and sofrito into the bread mixture.
  6. Bake in 350u0b0F oven for 30 minutes.
  7. Combine spices and rub roast with mix.
  8. Roast pork in 500u0b0F wood-fire oven for 45 minutes.
  9. Combine all ingredients except cucumber and let steep 2 minutes.
  10. Add cucumbers to liquid, chill.
  11. Process egg, lime juice, vinegar, mustard, and avocado in a food processor until smooth.
  12. Slowly add rendered bacon fat and olive oil while continuing to process until very smooth and thick.
  13. Fold in diced bacon.
