Homemade Cider Doughnuts
- 5/8 cup hard cider
- 1 cinnamon stick
- 4 tablespoons milk
- 3 1/16 cups bread flour
- 3 1/4 tablespoons sugar
- 1 tablespoon maple syrup
- 1/2 teaspoon salt
- 2 1/2 tablespoons fresh yeast
- 3/4 teaspoon ground cinnamon
- 3 1/2 tablespoons butter at room temperature and chopped
- vegetable oil
- 2 1/16 cups superfine sugar
- 4 tablespoons hard cider
- In a saucepan, heat the cider and cinnamon stick. Once the flavors have mixed, remove from the stove and let it cool.
- In a bowl, mix the milk, flour, sugar, maple syrup, salt, yeast, and ground cinnamon. Once mixed, add the cider. Knead thoroughly.
- Add the butter and continue to knead until smooth. Shape into a ball and place in a greased bowl. Cover and refrigerate overnight.
- The following day, place on a flat surface. Slightly knead and divide into 20 portions. Shape into thin doughnuts.
- Place on a floured surface and cover with a moist rag. Let them rest.
- Heat the vegetable oil on low heat and fry the doughnuts.
- Place on a cooling rack to remove the excess oil.
- For the Glaze:
- Place the sugar in a bowl and slowly add the cider. Mix using a fork to the desired thickness.
- Once the doughnuts are cool, dip them in the glaze. Place on the cooling rack to dry off the glaze.
