Banana Mango Bread
- 1 cup whole wheat flour
- 1/2 cup all purpose flour
- 2 tablespoons wheat germ
- 2 teaspoons double-acting baking powder
- 1/2 teaspoon sea salt
- 1 teaspoon cinnamon
- 1 cup butter or margarine
- 2/3 cup brown sugar loosely packed
- 1 teaspoon vanilla
- 2 eggs beaten
- 1 cup bananas ripe, mashed, approx. 4 bananas
- 1 cup mango ripe, finely diced, approx. 1 to 2 mangos
- 1 tablespoon citrus juice
- Directions Preheat oven to 350'F.
- Butter loaf pan.
- Combine flour and other dry ingredients.
- Cream together butter and sugar, adding vanilla and eggs.
- Mix well and gradually fold in flour mixture.
- Drizzle mango with citrus juice and add with bananas to bread mixture.
- After thoroughly combining, pour into pan and place in oven for approx. 1 hour.
