Ground Turkey Noodle Casserole
- 1 1/2 pounds ground turkey
- 1 cup onion chopped
- 1 cup green pepper chopped
- 15 ounces tomato sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 8 ounces wide noodles
- 8 ounces lowfat cream cheese
- 1 cup lowfat cottage cheese
- 1/2 cup plain yogurt
- 1 tablespoon poppy seed optional
- Cook the ground turkey, the onion and green pepper until the meat is no longer pink.
- Drain fat.
- Stir in tomato sauce, salt and pepper.
- Cook the noodles; drain.
- In a bowl, combine the cheeses and yogurt; toss with hot noodles.
- Layer 3/4 of the noodle mixture in a 13 x 9 inch casserole.
- Spoon meat mixture on top, leaving a border of noodles showing.
- Top with remainder of noodle mixture, leaving a border of meat showing.
- Sprinkle with poppy seed (optional).
- Bake in 375 degree oven for 30 minutes, covered.
- Uncover and continue baking an additional 10 to 15 minutes.
- Serves 8.
