Easy Pasta Fagioli
- 4 slices bacon, chopped
- 2 Tbsp. oil
- 1 large onion
- 1 c. celery, chopped
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. oregano leaves
- 1/8 tsp. pepper
- 1 c. spaghetti sauce
- 1 qt. warm water
- 1 1/2 c. ronzini bows or ditalini
- 1 (20 oz.) can white kidney beans
- 2 tsp. parsley
- Brown bacon in 2 tablespoons oil slow in large pot, then add onion, celery and garlic.
- Cook until tender on medium heat (not brown), then add salt, oregano, pepper and spaghetti sauce.
- Stir and cook 10 minutes.
- Add water (1 quart); bring to a boil.
- Stir in noodles and boil 15 minutes or until tender, then add beans and parsley.
- Heat through.
- Serve with Parmesan cheese.
