Christmas Tree Spice Cookies
- 1 13/16 cups ground almonds
- 7/8 cup granulated sugar
- 2 mandarins zest
- 3 teaspoons bitter almond extract
- 2 egg whites
- 30 whole almonds
- In a bowl, mix together the almond powder, the sugar, mandarin zest, and the bitter almond extract.
- Beat the egg whites until stiff and fold gently into the mixture above.
- Cover with a plastic film and refrigerate for 3 hours.
- Preheat oven at 150 degrees Celsius.
- Form little balls, and roll them in granulated sugar .
- Place them on a baking tray covered with parchment paper. Space them out a little, put a whole almond in the center, slightly flattening the amaretti.
- Cook them for 10-15 minutes.
- They should not be colored and remain soft in the center, only cracks will appear on the sides.
- Let them cool down for 4/5 minutes before putting them on a grid.
