Grain Free Sweet Potato Latkes
- 5 cups sweet potatoes peeled and grated, about 2-3 large potatoes
- 1 onion large, grated
- 3 eggs pastured
- 1/4 cup coconut flour
- 1 teaspoon sea salt Celtic
- 1/2 teaspoon cumin
- black pepper to taste
- Preheat oven to 400 degrees and line one large baking pan with parchment paper.
- Grate potatoes and onion in a food processor using the shredding disc. You can also do this by hand but I find the food processor saves a lot of time and pain! Place grated potatoes and onion in a tea towel and squeeze out as much liquid as possible.
- Toss potatoes and onion in a large mixing bowl with eggs, flour, salt, cumin and pepper until well mixed.
- Scoop 1/4 cup rounds of the mixture onto the parchment paper and pat down with the back of the measuring cup to form flat discs. Bake for 8 minutes, flip and cook an additional 8 minutes until golden brown.
- Keep warm in a 225 degree oven. You can also make these one to two days ahead and keep in the refrigerator in a glass dish between a few unbleached paper towels. Reheat at 400 degrees for 20 minutes.
