Grain Free Sweet Potato Latkes

  1. Preheat oven to 400 degrees and line one large baking pan with parchment paper.
  2. Grate potatoes and onion in a food processor using the shredding disc. You can also do this by hand but I find the food processor saves a lot of time and pain! Place grated potatoes and onion in a tea towel and squeeze out as much liquid as possible.
  3. Toss potatoes and onion in a large mixing bowl with eggs, flour, salt, cumin and pepper until well mixed.
  4. Scoop 1/4 cup rounds of the mixture onto the parchment paper and pat down with the back of the measuring cup to form flat discs. Bake for 8 minutes, flip and cook an additional 8 minutes until golden brown.
  5. Keep warm in a 225 degree oven. You can also make these one to two days ahead and keep in the refrigerator in a glass dish between a few unbleached paper towels. Reheat at 400 degrees for 20 minutes.
