Smokey Halibut Veracruz
- 2 tablespoons olive oil
- 2 red bell pepper, sliced
- 1 sweet onion large, thinly sliced
- 2 cloves garlic finely chopped
- 2 tablespoons knorr tomato bouillon with chicken flavor
- 1 cup water
- 1 bay leaf
- 1/2 cup pitted ripe olives
- 1/4 cup capers drained, coarsely chopped
- 1 tablespoon finely chopped fresh parsley
- 6 fish fillets
- Heat olive oil in a large, deep non-stick skillet over medium-high heat and cook next 3 ingredients about 4 minutes or until vegetables are tender, stirring occasionally. Stir in Knorr (R) Tomato and Chicken flavor Bouillon and next 5 ingredients. Bring to a boil. Reduce heat and arrange halibut in skillet. Simmer covered 10 minutes or until fish flakes with a fork. Remove bay leaf before serving.
