Creamy Chicken Pie
- pie crust partially baked
- 3 tablespoons butter
- 1/2 cup chopped onion
- 3 cups sliced mushrooms
- 3 tablespoons unbleached white flour
- 1 cup low fat cottage cheese
- 2 cups cooked chicken breast diced
- 1 cup chopped parsley
- 1/4 teaspoon ground pepper
- 1/4 teaspoon rosemary
- Prepare dough for crust and line bottom of pie pan.
- Reserve rest of dough to make a lattice top for pie.
- Bake for 5 to 10 minutes and remove from oven.
- preheat oven to 375 degrees.
- In large skillet, melt butter over medium heat.
- Cook onion and mushrooms until most of liquid has evaporated.
- Stir in flour and cook until bubbly; remove skillet from heat.
- Stir in chicken, cottage cheese, parsley, pepper and rosemary.
- Spoon into partially baked pie crust.
- Roll out remaining doug
