Cran Nut Granola
- 8 dates
- 1 1/2 cups pecans
- 1 1/2 cups walnuts
- 1 cup shredded coconut
- 1/3 cup pumpkin seeds
- 1/4 cup cranberries
- 1/4 cup ghee organic
- 1/3 cup organic coconut oil
- 1/3 cup honey
- 1/3 cup chia seeds
- Preheat oven to 350
- Dice dates in food prcessor then add pecans and walnuts to food processors and pulse until nuts are nicely chopped
- Add chopped nut mixture, shredded coconut, pumpkin seeds, cranberries and chia seeds in large mixing bowl and mix all ingredients with hands until blended
- Combine ghee and coconut oil together and warm until liquid. Add homey to ghee and coconut oil mixture.
- Drizzle oil and honey mixture over nut mix and blend with hands
- Press mixture into a baking sheet or baking dish lined with parchment paper.
- Bake 20 minutes at 350, or until granola is lightly golden
- Allow granola to cool, then break into pieces and store
