Strawberry Cheese Pastry Tarts
- 1/2 cup butter cold, cut in pieces
- 3/4 cup all purpose flour
- 6 tablespoons sour cream
- glaze Sugar, recipe follows
- 18 strawberries sliced
- 1 ounce semi sweet baking chocolate
- 3 ounces cream cheese
- 1/4 cup powdered sugar unsifted
- 2 teaspoons strawberry jam
- 1/2 teaspoon vanilla
- Combine 3 tablespoons sugar and 1 tablespoon water in a small pan. Stir over medium heat until sugar dissolves and glaze just comes to a boil. Use hot.
- 1. With a pastry blender or your fingers, work butter into flour until fine crumbs form. Stir in sour cream to stiff dough.
- 2. Cover dough. Chill at least 1 hour.
- 3. Cut dough in half. Roll out one portion at a time on a floured board to 1/4 inch thickness. Cut into 2 equal rectangles.
- 4. Reroll scraps to make 2 more rectangles.
- 5. Arrange rectangles on an ungreased rimmed baking pan. Brush tops with sugar glaze.
- 6. Bake at 400 degrees F. for 15 to 20 minutes. Transfer to a rack to cool.
- 7. Spread cream cheese mixture evenly on pastries. Arrange sliced strawberries on tops.
- 8. Melt chocolate in a small pan, stirring constantly. With a spoon, drizzle chocolate over strawberries.
