Salad Dumplings
- 4 tablespoons fruit vinegar
- 2 teaspoons dijon mustard
- 1 tablespoon honey
- 3 tablespoons sunflower oil
- 1/4 bunch chives finely chopped
- 1 red onion small, peeled and diced
- 3 1/2 ounces bacon sliced
- 1 leek trimmed, washed and sliced
- 1 pound dumplings frozen mini
- 5 1/2 ounces butter lettuce washed, torn into small pieces
- Whisk together vinegar, mustard and honey and season to taste. Add 2 tbsp oil in a trickle, while stirring. Whisk chives and onion into the dressing. Saute bacon in a dry pan for 5 mins, then drain on paper towels. Saute leeks for 5 mins in the bacon fat.
- Cook dumplings according to package instructions. Heat 1 tbsp oil in a pan and fry dumplings for 5 mins. Season to taste. To serve, arrange dumplings, lettuce, bacon and leeks on 4 plates and drizzle with the dressing.
