Raisin Coconut Pudding
- 1/2 cup coconut
- 1 tablespoon melted butter
- 2 cups milk
- 2 tablespoons sugar
- 1 cup Sun-Maid Raisins
- 1 egg white stiffly beaten
- 1/2 cup bread crumbs
- 1 egg yolk
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1 cup boiling water
- 1 tablespoon corn starch
- 2 tablespoons butter
- 1 pinch salt
- 1 teaspoon butter
- Add coconut, crumbs and butter to hot milk, beat egg yolk, mix with sugar, salt and raisins. Add to milk. Cool and fold in egg white. Pour into a greased baking dish and bake in moderate 350 degree oven until firm, about 15 minutes.
- Mix sugar and corn starch and salt, add water gradually, stirring constantly, boil 5 minutes. Remove from heat, add butter and vanilla; stir to mix pour over pudding.
