Satay With Peanut Sauce

  1. Cut the pork into skewer-size pieces.
  2. In the food processor, puree the onion, garlic, ginger, lime juice, soy sauce, coriander seeds, cumin, turmeric, and olive oil until smooth. The result should be a yellow paste.
  3. Place the pork and marinade in a resealable plastic bag. Close and shake to cover the pork with the marinade.
  4. Refrigerate overnight.
  5. Grind the cumin, coriander seeds, and cayenne peppers in a coffee grinder.
  6. In a saucepan, add the cumin, coriander seeds, cayenne peppers, coconut milk, peanut butter, lime juice, soy sauce, and sugar. Cook on low heat until smooth. Do not let it boil.
  7. Turn on the broiler on high.
  8. Insert the pork into the skewers. Broil for 10 minutes on each side, or until the edges of the pork are golden brown.
  9. Serve immediately, accompanied with the peanut sauce.
