Satay With Peanut Sauce
- 1 1/8 pounds pork tenderloin
- 1/2 onion small
- 2 garlic cloves
- 1 piece fresh ginger optional
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 teaspoon coriander seeds
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander seeds
- 7/8 cup coconut milk
- 4 tablespoons peanut butter
- 1 tablespoon lime juice
- 1 tablespoon soy sauce
- 1 teaspoon sugar optional
- 2 cayenne peppers
- Cut the pork into skewer-size pieces.
- In the food processor, puree the onion, garlic, ginger, lime juice, soy sauce, coriander seeds, cumin, turmeric, and olive oil until smooth. The result should be a yellow paste.
- Place the pork and marinade in a resealable plastic bag. Close and shake to cover the pork with the marinade.
- Refrigerate overnight.
- Grind the cumin, coriander seeds, and cayenne peppers in a coffee grinder.
- In a saucepan, add the cumin, coriander seeds, cayenne peppers, coconut milk, peanut butter, lime juice, soy sauce, and sugar. Cook on low heat until smooth. Do not let it boil.
- Turn on the broiler on high.
- Insert the pork into the skewers. Broil for 10 minutes on each side, or until the edges of the pork are golden brown.
- Serve immediately, accompanied with the peanut sauce.
