Crab Casserole
- 2 Tbsp. butter
- 2 Tbsp. all-purpose flour
- 1/4 tsp. salt
- 1/4 tsp. white pepper
- 1 c. milk
- 2 egg yolks, beaten
- 1 tsp. chopped chives or onion
- 1 tsp. dry mustard
- 1 tsp. Worcestershire sauce
- 1 c. crabmeat
- 1/4 c. buttered breadcrumbs
- Melt butter in top part of double boiler; add flour, salt and pepper.
- Cook until bubbly.
- Slowly add milk; stir briskly.
- Cook over hot water until thick and smooth, stirring occasionally. Continue cooking for about 5 minutes.
- Add egg yolks, then onion, mustard and Worcestershire sauce.
- Stir in crabmeat.
- Pour mixture into 1-quart casserole dish.
- Cover with buttered breadcrumbs. Bake at 400u0b0 for 45 minutes.
- Serves 2.
