Piña Colada Rice
- 2 cups basmati rice
- 1 tablespoon unsalted butter
- 1/2 cup BACARDI(R) Mixers Pina Colada mix
- 1 3/4 cups chicken bouillon
- 1 cinnamon stick
- 1/4 teaspoon salt
- Place uncooked rice in a sieve and wash by running cold water on it for 2 minutes. Drain well.
- Melt butter in a large saucepan over moderately high heat. Add the cinnamon stick and rice and stir to coat the grains.
- Cook, stirring constantly, until it becomes opaque. This takes about 3-5 minutes.
- Stir in BACARDI(R) Mixers Pina Colada mix, chicken bouillon, and salt and pepper and bring to a boil.
- Lower the heat to a simmer. Simmer covered for 20 minutes. Remove from heat and let stand, covered, 5 minutes.
- Remove cinnamon stick. Fluff rice with a fork.
