Rooiobos With Wild Berries Tea Muffins
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup sugar
- 2 teaspoons rooibos with wild berries tea
- 1 teaspoon poppy seeds
- 6 3/4 tablespoons milk
- 1 natural yogurt
- 5 3/8 tablespoons margarine softened, cool
- 1 egg
- poppy seeds for sprinkling
- Preheat oven to 200 degrees Celsius.
- Line12 muffin cake pans with paper liners.
- In a bowl, mix flour, baking powder, baking soda, sugar, rooiobos tea, and poppy seeds.
- In another bowl, mix milk, yogurt, margarine, and egg.
- Add the liquid ingredients to the dry ones, and stir with a spoon, without whisking. The dough for cupcakes shouldn't be whisked. Even if there are lumps, that is what makes the cupcakes lighter.
- Spoon the dough into the muffin pans, and sprinkle with some poppy seeds.
- Bake for 20 minutes, or until brown.
- Remove from the oven, unmold, and cool on a rack.
