Couscous And Tagine
- 1 cup chickpea cooked
- 1 eggplant
- 6 brussel sprouts cut into half
- 1 red onion chopped
- 2 cups tomato sauce organic
- 2 capsicum green
- ginger Small knob chopped
- 2 cloves chopped garlic
- 1 potato roughly cut
- 1/2 broccoli break it in ot small
- 1/2 bunch coriander
- 3 mint leaves
- 6 3/4 tablespoons coconut oil
- 1 7/16 cups couscous
- 6 3/4 tablespoons olive oil
- Boil 320ml water.
- Place couscous in the bowl and add salt ,olive oil and half portion broccoli.
- Add boiling water to the couscous and cover with glad wrap ( airtight ). Leave it for 10 minutes.
- Add the coconut oil to the hot pot. Place potato in the pot first, cook it for at least 5 minutes.
- Add onion, garlic and ginger, mix well. ( Seasoning)
- Add tomato sauce and cook it for 5 minutes.
- Add chickpea,brussel sprouts, capsicum.Let it simmer for 15 minutes.
- Finish with left broccoli and mix it well.
- Add chopped coriander and mint.
- Serve it couscous
