My Creamy Cheesy Flan
- 1 cup water
- 1 cup brown sugar
- 8 ounces light cream cheese softened
- 4 large eggs
- 12 ounces evaporated milk
- 14 ounces sweetened condensed milk
- 1 teaspoon vanilla extract
- In a saucepan, whisk together water and sugar,make sure sugar is melted.
- Heat the mixture and let it boil.
- Once the mixture boils, turn the heat to low and simmer the mixture for 10 to 15 minutes or until it becomes syrup.
- Pour mixture in a 9' deep dish pan or in any type of moulder pan that you like.
- In a mixing bowl, beat cream cheese until soft and fluffy.
- Add eggs one at a time
- Then pour condensed milk and evaporated milk and vanilla, mix well until combined.
- Transfer the mixture to the dish pan with caramelized sugar.
- Use roasting pan when you bake the flan , put some water in the roasting pan ( just enough.. at least half filled) and then put the dish pan with the mixture.
