Homespun-Meat Pie
- 1 lb. ground beef
- 1 (4 oz.) can mushrooms, drained
- 1 egg
- 1/3 c. chopped onion
- 1/4 c. dry bread crumbs
- 1 tsp. salt
- dash of pepper
- 2 c. chopped potatoes, cooked
- 3 Tbsp. milk
- 1/2 lb. Velveeta cheese, cubed
- 1 Tbsp. chopped parsley
- 1/4 tsp. salt
- Combine meat, mushrooms, egg, onion, bread crumbs and seasonings; mix lightly.
- Press meat mixture onto bottom and sides of a 9-inch pie plate.
- Bake at 400u0b0 for 15 minutes.
- Remove meat shell from oven.
- Reduce oven temperature to 350u0b0.
- Drain excess fat from meat shell.
- Mash hot potatoes with milk.
- Stir in process cheese, parsley and salt.
- Fill hot meat shell with potato mixture.
- Bake for 10 minutes.
- Makes 6 servings.
