Veggie Mediterranean Wrap
- 3/4 cup feta cheese
- 15 ounces white beans drained
- 1/2 red pepper medium, chopped
- 3 green onion /scallions, green part only finely chopped
- 2 tablespoons parsley finely chopped
- 1/2 medium tomato finely chopped
- 1/2 teaspoon salt pepper, garlic powder or to taste
- 1 tablespoon fresh cilantro chopped, optional
- 1 large flour tortilla
- 1/2 cup plain greek yogurt regular or low fat
- 2 tablespoons mayonnaise try with sriracha mayonnaise
- 3 teaspoons dijon mustard grainy
- 2 tablespoons chives minced
- 1/4 lemon squeezed
- Mash and mix up Feta Cheese and white beans in a bowl.
- Then, add the rest of the filler ingredients, any optional ingredients, and mix.
- Mix all ingredients up for Yogurt spread different bowl.
- Heat Tortilla 30 seconds in a frying pan.
- Down the middle of the Tortilla place 1/4 cup of the Spread and then a spoonful of filler.
- Roll it up.
