Italian American Casserole
- 1 1/2 to 2 lb. ground meat (I use ground round)
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 1 1/2 c. uncooked macaroni
- 1 jalapeno pepper (optional)
- salt and pepper to taste
- 8 to 10 slices American cheese
- 2 (8 oz.) cans tomato sauce
- 1/2 tsp. garlic powder
- 1 (No. 303) can tomatoes, chopped
- 1 1/2 c. whole kernel corn, drained
- 1 Tbsp. parsley
- 1/2 tsp. oregano
- 1 tsp. chili powder
- Brown meat, onion and green pepper in a large skillet.
- Boil macaroni in a large pot.
- To the ground meat, add tomato sauce, tomatoes, corn, parsley, oregano, chili powder, garlic powder, salt, pepper and jalapeno, if desired.
- Let mixture simmer on low about 30 minutes, so that it is fairly thick.
- Drain macaroni. Mix macaroni with the meat mixture.
- Stir well.
- Arrange cheese on top, so that it covers all the meat.
- Cover and let cheese melt.
