Mini Leftover Chicken & Avocado Salad Sliders With Cranberry Aoli
- 1 pound chicken or turkey, shredded
- 1/2 cup mayo good, plus 2 more tbs for aoli
- 2 tablespoons chives chopped
- 1/2 avocado diced
- 1 teaspoon garlic powder plus a sprinkle more for aoli
- 1 teaspoon herbs de provence or italian herbs
- 1/4 cup apples chopped, I love Pink Lady
- 1/4 cup chopped celery
- 2 tablespoons chopped nuts pecans or almonds work great
- salt
- 1 handful arugula for serving
- rolls Mini, pretzel rolls work great!
- 2 tablespoons cranberry sauce
- Mix all ingredients of the salad together thoroughly. (Though, wait to add the avocado until you're ready to serve.) Cover, and chill until cool.
- Toast mini rolls lightly under the broiler. While you're waiting, make the aoli with 2 tbs mayo, plus cranberry sauce, and a sprinkle of garlic powder.
- Remove rolls from oven, slather tops with cranberry aoli, add salad mixture, and top with arugula.
- Enjoy!
