Lamb, Apricot And Prune Tagine
- 2 pounds diced lamb
- 1 onion large, finely chopped
- 2 cloves garlic minced
- 4 tablespoons olive oil
- 3 tablespoons honey
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 8 ounces tomatoes roughly chopped
- 8 ounces prunes dried
- 8 ounces dried apricots
- Combine diced lamb, onion, garlic, olive oil, honey and spices. Season. Cover and let marinate for at least 1 hour at room temperature, or overnight in the refrigerator.
- Transfer lamb mixture to a large pan and add 3 cups water. Bring to a boil, cover and simmer very gently for 1 hour 30 mins, stirring occasionally. Add tomatoes, prunes and apricots. Cook, uncovered, for 15-20 mins, until thickened.
