Lamb, Apricot And Prune Tagine

  1. Combine diced lamb, onion, garlic, olive oil, honey and spices. Season. Cover and let marinate for at least 1 hour at room temperature, or overnight in the refrigerator.
  2. Transfer lamb mixture to a large pan and add 3 cups water. Bring to a boil, cover and simmer very gently for 1 hour 30 mins, stirring occasionally. Add tomatoes, prunes and apricots. Cook, uncovered, for 15-20 mins, until thickened.
