Mini Meatloaves With Roasted Garlic Mashed Potatoes
- 2 2/3 pounds potatoes mashing, peeled and quartered
- 2 teaspoons olive oil
- 1 yellow onion large, chopped
- 1 tablespoon marjoram chopped
- 2 teaspoons thyme
- 7 ounces ground pork
- 7 ounces ground veal
- 9 ounces ground beef
- 1/4 cup steak sauce
- 1 egg
- 2 3/4 ounces fresh breadcrumbs
- olive oil spray
- 1 button mushroom or large meadow
- 6 cloves garlic unpeeled
- 2 tablespoons butter
- 3/4 cup milk
- 1/4 cup sour cream
- Preheat the oven to 375u0b0F. Bring a medium saucepan of salted water to a boil and cook the potatoes for 20 mins or until tender. Drain and return to the pan.
- Heat the olive oil in a frying pan over medium-high heat. Add the onion and cook for 6 mins, then add the herbs and cook them for 2 mins. Remove from the heat and leave to cool slightly.
- Using clean hands, mix the meats, steak sauce, egg, breadcrumbs, and onion in a bowl and season to taste.
- Spray 4 mini loaf pans with olive oil. Divide the mixture among the pans and place 2 slices of mushroom on top of each. Spray with a touch more oil and place the pans on a baking sheet with the garlic cloves and bake for 25 mins.
- Return the pan with the drained potatoes to a low heat to remove excess moisture. Mash the potatoes, remove them from the heat and add the roasted garlic squeezed from the skins, along with the butter and milk. Season to taste and mash together well.
- Remove the meatloaves from the pans and serve them with sour cream and mashed potatoes.
