Shrimp Salad
- 5 c. water
- 2 c. fresh snow peas
- 1 lb. cooked medium shrimp, peeled and deveined
- 2 c. cooked brown rice
- 1 medium red onion, diced
- 1 medium sweet red pepper, diced
- 1/3 c. fresh minced parsley
- 2 Tbsp. lemon juice
- 1 Tbsp. soy sauce
- 1 Tbsp. canola oil
- 2 Tbsp. sesame oil
- 1/2 tsp. ground ginger
- 1 minced garlic clove
- In a saucepan, bring water to a boil; add peas, cover and cook for 2 minutes. Drain.
- Place peas in ice water; drain and pat dry. In a large bowl, combine shrimp, rice, onion, red pepper, parsley and snow peas. In a small jar, combine lemon juice, soy sauce, canola oil, sesame oil, ginger and garlic. Shake well and pour over shrimp mixture. Toss to coat.
