Chicken Banh Mi
- 1 grilled chicken flesh shredded
- 4 green onions thinly sliced, diagonally soaked in iced water
- 4 bread rolls long crusty, split
- 1/3 cup Japanese Mayonnaise
- 1/2 head iceberg lettuce finely shredded
- 1 red pepper seeded, thinly sliced
- 1 bunch cilantro leaves picked
- 1 red chili long, sliced
- dressing
- 1/3 cup lemon juice
- 1/4 cup fish sauce
- 2 tablespoons light soy sauce
- 1/2 tablespoon sugar
- In a large bowl, combine chicken and onion.
- To make dressing, in a small bowl, whisk all ingredients together, until sugar dissolves. Season with white pepper.
- Add half dressing to chicken mixture, tossing well.
- Spread rolls with mayonnaise. Fill with lettuce, pepper and chicken mixture. Drizzle with remaining dressing. Top with cilantro and chili to serve.
