German Pfeffernusse Cookies
- 2 1/2 cups flour
- 1/4 teaspoon paprika
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon five spice powder
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon baking soda
- 1/2 cup butter room temperature
- 1 cup brown sugar
- 4 tablespoons molasses
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 1/4 cups powdered sugar
- In a large bowl, whisk together the flour, paprika, cinnamon, five-spice powder, nutmeg, cloves, and baking soda.
- Set aside.
- Place the butter and brown sugar in a food processor and beat until foam forms.
- Then mix the molasses, egg, and vanilla extract into the butter and sugar mixture for 1 more minute.
- Pulse in the flour mixture until just absorbed.
- Preheat the oven to 180 degrees Celsius.
- Line a baking pan with parchment paper.
- Using a wet or lightly greased hand, pinch off sections of the batter and roll them into balls the size of a walnut.
- Place on the baking tray leaving 4 centimeters between each cookie.
- Bake for about 15 minutes until the tops begin to crack.
- Remove and cool on a baking rack.
- Place the powdered sugar in a plastic bag with some cookies. Close the bag and shake, coating the cookies.
- Repeat in batches until all cookies are coated.
- They will last 1 week in a sealed container.
