Banana And Orange Loaf
- 1 1/8 cups spelt Whole Meal Flour
- 6 bananas around 600 gr
- 3/4 cup honey
- 2 2/3 tablespoons muscovado sugar Light
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 4 orange juice tsbp
- zest a whole orange
- 1 1/3 tablespoons caster sugar
- Peal the orange and keep all the zest. Squeeze the juice out of the orange and keep it on the side.
- In a bowl put the flour, baking soda & powder, cocoa, cinnamon and 3/4 of the orange zest and mix them for 2 minutes.
- In another bowl or in the mixer, put the bananas, sugar and honey and make a nice and creamy mix. Then add the orange juice and mix for 30 seconds.
- Take the sugary mix and pour down in the bowl with the flour. Stir and batter until all the flour is covered and you have one single dark brown mixture.
- Place the final mixture in the load/bread tray, sprinkle the 10 gr of caster sugar and the remaining zest of the orange on the top of it. Then put in the oven for about 40 minutes.
