Fyrstekake - Norwegian Prince'S Cake (Almond Tart)

  1. Preheat oven to 350 degrees F
  2. Dough:nn a large mixing bowl whisk together (sifted) flour, baking powder and sugar. Add butter in small slices to the flour mixture (one at a time to avoid any butter clumps). Beat in egg and add heavy cream. Blend until a dough forms. Gather dough into ball and chill (covered) in refrigerator for at least 2 hours. nNote: this dough is best made using an electric mixer, where you can alternate the appropriate attachments)
  3. Filling: neat almond paste until softened, add rum extract, vanilla extract and sweetened condensed milk. Blend on high speed for 3-5 minutes. Gradually add in confectioners' sugar. Add in almond halves and gently fold in egg whites. net mixture aside
  4. Press 3/4 of dough into a 9-inch (lightly greased) pie pan. Evenly spread the almond filling. On a floured board, roll the remaining dough to about 1/8 inch thickness and cut it into 1/2 inch strips. Lay strips over filling in a lattice style. No need to worry about fastening edges, the dough cooks evenly and looks almost sewed in once the cake is baked.
  5. Whisk egg yolk and 2 teaspoons water in a small bowl. Brush top of cake with egg wash.
  6. Bake for about 30-35 minutes, or until top of cake becomes golden brown. Cool for about 15 minutes and serve.
