Pig Skin Noodles With Pork Meatballs
- Parmesan cheese As needed
- parsley As needed micro
- 3 onions small diced
- 1 head garlic minced
- salt To taste
- chili flakes To taste
- 4 pounds tomatoes canned
- basil As needed, chopped
- 1/4 cup olive oil
- 1 cup pork stock
- 1 1/2 pounds ground pork
- 1/2 cup ricotta cheese
- 2 tablespoons thyme
- 2 tablespoons garlic minced
- 1/4 cup panko bread crumbs
- salt To taste
- pepper To taste
- 1 1/2 pounds pig skin scraped
- 3 tablespoons salt
- 6 quarts water
- 1. For the noodles: Braise the pig skin in salted water until tender, cool and press over night. Cut into desired noodle shape
- 2. For meatballs: Combine all ingredients and form small balls, saute on medium high heat for 3 minutes on each side
- 3. For the sauce: Sweat the onions until translucent, add the garlic and cook until fragrant. Add remaining ingredients and simmer for 40 minutes, remove and blend in a Vitamix
