Pig Skin Noodles With Pork Meatballs

  1. 1. For the noodles: Braise the pig skin in salted water until tender, cool and press over night. Cut into desired noodle shape
  2. 2. For meatballs: Combine all ingredients and form small balls, saute on medium high heat for 3 minutes on each side
  3. 3. For the sauce: Sweat the onions until translucent, add the garlic and cook until fragrant. Add remaining ingredients and simmer for 40 minutes, remove and blend in a Vitamix
