Spiced Pork Medallions With Cranberries
- 2 pork tenderloins
- 1 teaspoon salt
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon pepper
- 1/4 teaspoon ground nutmeg
- 1 pinch ground cloves
- 1 tablespoon sunflower oil
- 1/4 cup jelly cranberry, or jam
- 1 tablespoon dried cranberries whole
- 1 tablespoon cream
- 2/3 cup broth
- 1/2 beef cube
- Trim all visible fat from pork medallions. With meat mallet beat them slightly.
- In a medium bowl, mix salt, thyme, cinnamon, pepper, nutmeg and cloves. Add meat to spice mixture, toss to coat.
- In a skillet heat oil, add meat, cook 5 minutes on each side or until cooked. Remove from skillet and set aside (keep them warm).
- Stir cranberry jelly or jam, whole cranberries and cream into drippings in skillet.
- Stirring in beef or vegetable broth until melted and smooth and heat to boiling.
- Spoon sauce over pork and serve with cooked bulgur.
