Spiced Pork Medallions With Cranberries

  1. Trim all visible fat from pork medallions. With meat mallet beat them slightly.
  2. In a medium bowl, mix salt, thyme, cinnamon, pepper, nutmeg and cloves. Add meat to spice mixture, toss to coat.
  3. In a skillet heat oil, add meat, cook 5 minutes on each side or until cooked. Remove from skillet and set aside (keep them warm).
  4. Stir cranberry jelly or jam, whole cranberries and cream into drippings in skillet.
  5. Stirring in beef or vegetable broth until melted and smooth and heat to boiling.
  6. Spoon sauce over pork and serve with cooked bulgur.
