Chocolate Coated Vanilla Islands
- 8 scoops Carte D'Or Vanilla Ice Cream 200g/400ml
- 5/8 cup dark chocolate
- 3 3/4 tablespoons dark chocolate chips
- 3 3/8 tablespoons dark rum
- 1/2 ounce chopped hazelnuts toasted
- Scoop the Carte D'Or Vanilla Ice Cream into a bowl and mash with the back of a spoon.
- Mix in the dark chocolate chips.
- Place tablespoons of the Carte D'Or Vanilla Ice Cream mixture on a baking sheet covered with baking parchment and mould with the back of the spoon into circles or shapes.
- Return the ice cream islands back to the freezer for 1 hour.
- Melt the dark chocolate in a bowl over a pan of simmering water.
- Pour in the rum, the chocolate will thicken.
- Serve 2 or 3 islands per person, topped with the chocolate rum sauce and sprinkled with the toasted chopped hazelnuts.
