Chocolate Coated Vanilla Islands

  1. Scoop the Carte D'Or Vanilla Ice Cream into a bowl and mash with the back of a spoon.
  2. Mix in the dark chocolate chips.
  3. Place tablespoons of the Carte D'Or Vanilla Ice Cream mixture on a baking sheet covered with baking parchment and mould with the back of the spoon into circles or shapes.
  4. Return the ice cream islands back to the freezer for 1 hour.
  5. Melt the dark chocolate in a bowl over a pan of simmering water.
  6. Pour in the rum, the chocolate will thicken.
  7. Serve 2 or 3 islands per person, topped with the chocolate rum sauce and sprinkled with the toasted chopped hazelnuts.
