Small No Knead Muesli Bread Balls
- 3 3/8 tablespoons water
- 1 tablespoon milk
- 1 tablespoon yeast
- 3 1/4 cups white flour
- 2 5/8 cups rye flour
- 6 3/8 tablespoons flour wholewheat
- 1 tablespoon salt
- 3/4 cup muesli with dried fruit
- 1 tablespoon liquid honey
- 2 tablespoons flour
- 2 tablespoons muesli for decoration
- Make cool water and milk, add yeast.
- In a large bowl, pour in flours, salt, muesli, and honey. Add yeast mixture, stir quickly with a wooden spoon (do not knead).
- The dough is very soft (depending on the flour, the dough requires more or less liquid. If necessary, add a little more liquid, otherwise the bread will be more compact once baked).
- Sprinkle the dough's surface with 2 tablespoons of flour, and cover with a clean cloth. Store in a dry place away from drafts for 1 1/2 hours.
- Preheat oven to 210 degrees Celsius.
- Form balls of dough. If too sticky, use a tablespoon. Place dough balls in oven-proof cupcake boxes. Dampen surface, sprinkle with muesli.
- Bake for 20 minutes.
