Small No Knead Muesli Bread Balls

  1. Make cool water and milk, add yeast.
  2. In a large bowl, pour in flours, salt, muesli, and honey. Add yeast mixture, stir quickly with a wooden spoon (do not knead).
  3. The dough is very soft (depending on the flour, the dough requires more or less liquid. If necessary, add a little more liquid, otherwise the bread will be more compact once baked).
  4. Sprinkle the dough's surface with 2 tablespoons of flour, and cover with a clean cloth. Store in a dry place away from drafts for 1 1/2 hours.
  5. Preheat oven to 210 degrees Celsius.
  6. Form balls of dough. If too sticky, use a tablespoon. Place dough balls in oven-proof cupcake boxes. Dampen surface, sprinkle with muesli.
  7. Bake for 20 minutes.
