Chocolate Truffles
- 8 ounces chocolate good quality, chopped
- 1/2 cup heavy cream
- 1/2 teaspoon pure vanilla extract
- cocoa powder
- candy canes crushed
- nuts chopped
- Place the chopped chocolate and heavy cream in a medium microwave safe bowl. Heat for 30 seconds in the KitchenAid(R) Built In Microwave Oven and stir. Heat for another 30 seconds and remove from the microwave. Stir until chocolate is silky and smooth. If there are still lumps, heat for an additional 15 seconds and stir again. Stir in the vanilla extract.
- Pour the chocolate mixture into a small casserole dish. Chill in the KitchenAid(R) French Door Refrigerator for 2-3 hours, until chocolate is firm.
- Remove from the refrigerator and let soften for 15-20 minutes. Using a small scoop, scoop out spoonfuls of the chocolate mixture and roll into balls.
- Place the cocoa powder, crushed candy canes, and chopped nuts in small bowls. Roll the truffles into desired toppings and place on a baking sheet. You can line it with parchment paper or wax paper if you would like.
