Oat Bran Banana Muffins
- 1 1/2 cups oat bran
- 1/2 cup skim milk
- 1/2 cup mashed banana
- 1 cup brown sugar packed
- 1/4 cup vegetable oil
- 2 teaspoons molasses
- 2 egg whites
- 1 tablespoon baking powder
- 1/2 tablespoon cinnamon
- 1/4 tablespoon salt
- 1/4 teaspoon ground allspice
- 1/2 cup raisins
- Preheat oven to 400 degrees.
- Grease 8-10 muffin cups or line with paper liners.
- Combine oat bran, milk, and mash banana in mixing bowl; stir in bran until well moistened.
- Let stand 15 minutes.
- Add remaining ingredients and mix well.
- Spoon into muffin cups and bake until they are browned, 30-35 minutes or until tests done.
- Transfer to wire rack.
- Serve warm or at room temperature.
- I substitute 1/4 cup Egg Beaters for the 2 egg whites.
