Oat Bran Banana Muffins

  1. Preheat oven to 400 degrees.
  2. Grease 8-10 muffin cups or line with paper liners.
  3. Combine oat bran, milk, and mash banana in mixing bowl; stir in bran until well moistened.
  4. Let stand 15 minutes.
  5. Add remaining ingredients and mix well.
  6. Spoon into muffin cups and bake until they are browned, 30-35 minutes or until tests done.
  7. Transfer to wire rack.
  8. Serve warm or at room temperature.
  9. I substitute 1/4 cup Egg Beaters for the 2 egg whites.
