Clams In Black Bean Sauce(Recipe For One Pound Of Clams; May Use For Any Shellfish.)
- 1 lb. clams
- 5 c. water
- 1 Tbsp. oil
- 1 1/2 tsp. minced garlic
- 1 tsp. black beans
- 6 oz. chicken broth
- 1 tsp. salt (optional)
- 1 tsp. sugar
- 1 tsp. ajinomoto (optional)
- 1 Tbsp. oyster sauce
- 1 tsp. shoyu
- 1 tsp. cornstarch
- 2 Tbsp. water
- Chinese parsley (optional)
- Rinse clams thoroughly.
- Place in 5 cups of water and bring to a boil.
- As soon as clams start to open, remove from stove and set aside and drain.
- Prepare black beans by soaking in warm water and mashing it.
- Heat oil; add garlic and black bean.
- Add broth, sugar, oyster sauce, shoyu, salt and ajinomoto.
- Make cornstarch paste by adding water to the cornstarch.
- Add to sauce to thicken.
