Tuna Filled Chile Peppers With Broth
- 4 chile peppers poblano, grilled, peeled, with seeds removed
- 2 cans tuna in water, drained
- 1 potato small, cubed and cooked until tender
- 3 tablespoons onion minced
- 3 tablespoons parsley minced
- salt and ground black pepper
- 1 can tomato puree
- 1/2 cup water
- 1 tablespoon mustard
- 1 piece onion
- 1 clove garlic
- 1/2 teaspoon oregano ground
- cooking spray
- Mix the tuna with the potato, onion, and parsley. Season with salt and pepper.
- Fill the chile peppers with the tuna mixture
- Make the broth by blending the tomato puree with the water, mustard, onion, garlic, and oregano. Saute the mixture in a hot skillet with a little cooking spray and let simmer until of the desired consistency.
- Serve the chiles in the broth.
