Yoda Pancakes And Death Star Cookies
- 1 medium egg
- 1/3 cup milk
- 1 ounce baby spinach fresh, roughly chopped
- 2 tablespoons sugar
- 1 pinch salt
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 2 tablespoons butter
- 1 ounce walnut halves
- 1 ounce dried apricots soft
- 1 tablespoon honey
- 2 ounces coconut dried
- bananas small, to serve
- 1 strawberry syrup syringe of, optional
- 1 syrup syringe of orange, optional
- For the pancakes, place the egg, milk, spinach, sugar and salt in a bowl. Blend until smooth using a stick blender.
- Add the flour and baking soda to the blended spinach and whisk to combine.
- Heat a small amount of the butter in a small frying pan, pour in enough batter so the pancakes are approximately 2-3 inches in diameter and cook for 1-2 mins each side. Repeat until all of the batter has been used up.
- For the star dust balls, place the walnuts, apricots, honey and half of the dried coconut into a bowl and blend using a stick blender. Form into small balls, then roll in the remaining coconut.
- Pack into a lunch box with the pancakes, bananas and 2 syringes of the strawberry syrup and orange syrup (if using).
