Layered Meatloaf (Mexican)

  1. Preheat oven to 350 and set out 1 loaf pan
  2. Hold the cheese and hamburger meat in reserve
  3. Mix remaining ingredients in a large mixing bowl
  4. Add hamburger meat to mixture and blend thoroughly
  5. Layer 1/2 of the meat mixture on the bottom of the pan
  6. Layer cheese over the meat
  7. Layer the remaining meat mixture on top
  8. Cook on 350 for 1 1/2 hours (cook times may vary)
  9. Remove from oven and cover with a layer of cheese
  10. Cook for another 5-10 minutes
  11. Remove from oven and let cool 5-10 minutes before cutting
  12. Serve slices over tortilla chips and topped with sour cream, shredded lettuce and diced tomatoes
  13. Suggested sides: avocado slices, refried beans, spanish rice
