Layered Meatloaf (Mexican)
- 8 oz. bag shredded cheese (cheddar, Monterrey Jack or cheddar jack)
- 2 lbs hamburger meat (93/7, otherwise there's too much grease)
- 2 packets taco seasoning mix
- 1/2 cup diced bell pepper
- 2 beaten eggs
- 1/2 cup tomato sauce
- 1/2 cup plain bread crumbs
- Preheat oven to 350 and set out 1 loaf pan
- Hold the cheese and hamburger meat in reserve
- Mix remaining ingredients in a large mixing bowl
- Add hamburger meat to mixture and blend thoroughly
- Layer 1/2 of the meat mixture on the bottom of the pan
- Layer cheese over the meat
- Layer the remaining meat mixture on top
- Cook on 350 for 1 1/2 hours (cook times may vary)
- Remove from oven and cover with a layer of cheese
- Cook for another 5-10 minutes
- Remove from oven and let cool 5-10 minutes before cutting
- Serve slices over tortilla chips and topped with sour cream, shredded lettuce and diced tomatoes
- Suggested sides: avocado slices, refried beans, spanish rice
