Peach Caramels
- 1 tablespoon ground almonds
- 23 almond essence dshs
- 1 tablespoon caster sugar
- 5/8 cup whipping cream or double, stiffly whipped 4
- peaches large ripe, skinned halved and stoned
- 2 tablespoons blanched almonds toasted
- 7 1/4 tablespoons light brown sugar soft
- 1 3/4 tablespoons butter
- 1 tablespoon milk
- Stir the ground almonds almond essence and caster sugar into the whipped cream.
- Fill the peach cavities with almond cream reserving a little for decoration.
- Sandwich the peach halves together and arrange on a serving dish.
- Bring the brown sugar butter and milk to the boil and simmer over low heat for exactly 7 minutes. Remove from the heat and beat with a wooden spoon for 1 minute until the sauce is smooth.
- Pour the sauce over the peaches in waves so that it does not cover them completely.
- When the sauce has cooled (about 3 minutes) spoon or pipe the remaining cream over and scatter with the toasted almonds.
