Mom'S Banana Nut Bread

  1. Mix oil and sugar. Add egg and mix. Add flour, baking soda, baking powder, salt, sour milk and mix. Then add mashed bananas and nuts and mix. Pour into greased 5"x9" pan. Bake in preheated 350 degree oven for approximately 45 minutes to an hour when baking tester (or wooden toothpick) comes out clean. Let stand 10-15 minutes then turn out onto baking rack to cool.
  2. Good spread with butter or with softened cream cheese.
  3. To make this small quantity of sour milk, put the 3 tablespoons of milk into a small bowl and add 1/4 teaspoon of white vinegar. Let set for 1 minute and then mix as above.
  4. I have substituted one of the bananas with 1/4 cup of unsweetened applesauce and then reduced the sugar to 1/2 cup and it was delicious. The banana flavor was a little lighter.
