Basil Stuffed Tomatoes
- greek yogurt
- basil leaves amount to your liking
- 1 grape tomatoes Carton of
- 1/2 lemon peel included
- pepper
- dried shallots or Onions, optional
- 1/4 teaspoon olive oil
- Start by preparing your tomatoes, half them and pull out the seeds.nhen set them aside, and get to work on your filling.
- For the filling, add some Greek yogurt to a small bowl along with some finely chopped basil.
- Stir the basil and yogurt together until smooth. You can even add this to a blender for a smoother filling.
- Add in the olive oil, salt & pepper, and dried shallots to taste. I even added some drops of lemon into the mixture to make it more zesty.
- Pour the seasoned basil and yogurt mixture into a small ziploc baggie, pushing it into the corner. Cut the corner and pipe the filling into the halved tomatoes.
- Garnish with some extra basil leaves and enjoy this delicious appetizer!
