Gnocchetti Verdi Alla Tirolese (Spinach SpäTzle)

  1. You can use the convenience Gnocchetti straight out of the package, but I prefer to blanch them because they are more tender.
  2. Cut the Speck into small cubes and finely chop the shallots. Eat the oil in a pan and add the Speck and the shallots frying them to a glaze.
  3. In the meantime you have had a stock pot with water boiling, just add the Gnocchetti, stir and drain as soon as they come up on the surface.
  4. Add the drained Gnocchetti to the sauce pan, sauteing to mix the ingredients. Pour the double cream onto the Gnocchetti and stir. Season with salt and fresh ground black pepper to taste.
